The Origin -

Santa Elena &
the Citará Corridor

This innovative coffee comes from the Santa Elena farm in Ciudad Bolívar, Antioquia (Colombia). The farm is located in a privileged position within the Citará biological corridor at an altitude of 1,800 meters. On 15.5 hectares of cultivated land, complemented by 4.5 hectares of protected old-growth forest, a first-class Caturra coffee grows here in an ecosystem full of biodiversity.

Processing & Harvesting

The name "20 Brix" refers to the measurement of the sugar content in the cherries – a sign of maximum ripeness and sweetness.

  • Natural Process: Paula uses one of the most demanding methods, processing the entire cherry. This requires absolute perfection, as not a single faulty cherry may disrupt the process.
  • Solar House: The beans dry in a special solar House under a controlled atmosphere, followed by precise storage and stabilization to give the profile the final touch of elegance.
